Pulled Pork in Bordeaux, Pork Braise or Effiloché

I love French cuisine, obviously. Sometimes, I do need a little bit of comfort food from my old home in North Carolina. We make ‘pulled pork’ at home, but of course nothing is like whole hog over a fire pit. Bordeaux does offer a few locations to try out if your in need of some. What is generally missing for me, besides the smoke, is the crunchy skin bits that I love from locations like Skylight BBQ in North Carolina. For those who don’t know, Eastern NC is famous for whole hog but also a vinegar based sauce.


BUNAMI is another location offering French pulled pork shoulder, ‘Effiloché du porc’. The owner did spend time traveling around the USA to discover our styles of braised meats. Their ‘Joey’ sandwich has a crunchy cabbage slaw inside which tastes close to NC! Other types of braised meats are available. This location is near to the cathedral with a dining space that resembles some American diners. FILOCHE is in Saint Pierre, close to Place du Palais. Opened in 2025, this French duo offer a couple of slow-cooked, low temp meat options but naturally I went for the ‘porc braise’. It’s served on a toasted brioche bun with garlic cream sauce and chimichurri which blend well together. The mustard seeds add a bit of texture. Filoche uses pork shoulder, cooked ten hours, sourced from the Boucherie Sovian Gazeau in Canejan. If you want to buy pulled pork already make that you just need to heat at home from the artisan butcher Bouche in Bordeaux! You can order in advance their slow cooked shoulder made from hogs raised in Corrèze. Of course Bouche has a lot of great meats, so worth stopping by regardless!
