The Carraz family has a wonderful guinguette in Gajac on Friday nights. Réservations are required to take part in the open air dining at their farm. Carraz are one of the many butchers in Bazas, but what makes them really special is the fact they have their own farm. In addition they are selling ‘boeuf de Bazas’, which isn’t the same as ‘boeuf Bazadaise’. Boeuf de bazas indicates the animals are born, raised and slaughtered in territoire bazadais. This could be a couple other breeds, but of course ideally we will be getting the grey coated bazadaise.
This is where we got our beef for the fete des Boeufs gras this year, Carrez. The beef has a lovely marbling, great fat, ideally slaughtered around 8-12 years of age traditionally-although more likely 4 years today. Find Carraz in Bazas at 13 Cours du Gen du Gaulle, 33430 Bazas, FRANCE.
